La lavorazione del pesce è divisa in tre fasi: battitura, ammollo e strizzatura per portare il baccalà alla sua consistenza originale e la sua cottura ricalca la tradizione con l’utilizzo di materie prime di prim’ordine. Nulla è lasciato al caso. Il risultato è un piatto buono e leggero.
